Beef Nikumiso Recipe

Nikumiso is ground meat cooked with aromatic miso based sauce. While ground pork is more commonly used for this dish, ground beef is just as good. In this recipe, in addition to regular miso paste, gochujang (Korean red chili paste) is added to make it a little bit spicy.

Ingredients · Servings 4
  • 1 tsp ginger
  • 2 cloves garlic
  • 1/2 onion
  • 2 tbsp sugar
  • 2 tbsp sake
  • 2 tbsp soy sauce
  • 3 tbsp miso paste
  • 1 tbsp gochujang (red chili paste)
  • 1 tbsp oil
  • 1 lb ground beef
Method
  1. Mince ginger and garlic. Chop onion finely and set aside.
  2. In a small bowl, mix sugar, sake, soy sauce, miso paste, and gochujang, and set aside.
  3. In a frying pan, heat oil at medium heat with ginger and garlic. When the oil starts to be aromatic, add ground beef and cook until the color changes. Then add chopped onion, and cook until soft. Add 2 and cook for 5 minutes.
