Pâté en croûte is a very old French dish that at Saddle is prepared with the finest ingredients: foie gras, veal tongue, pork jowl, pistachios, pumpkin seeds, and various types of brandy. The mixture of ingredients is left to marinate for 12 hours and then encased in an elegant puff pastry with a high butter content.

The tripe, a clear homage to the legendary Jockey restaurant, which once occupied the same premises as Saddle, is a dish with which they wanted to revive an iconic recipe. The tripe is prepared by hand, with processes that extend over several days. Its long, rich flavor is the result of the patience involved in its preparation and the use of the finest offal, as well as the inclusion of Iberian pork shoulder in the sofrito, which gives it a unique character.
