Andrés Rodríguez and Zeru celebrate the second edition of Terra
As part of their quest for authenticity, Israel Aretxiga and his team recently launched the Terra pop-up, where for a few days Zeru Lomas becomes the setting for a gastronomic event where the sommelier sets the rules.
Conceived as a project that breaks with all convention, Terra proposes a new way of thinking about gastronomy. “Currently, practically all restaurants are concerned with inviting chefs from different projects to cook, but very rarely, if ever, is it the sommelier you invite. And that's due to one particular thing: in most restaurants, the structure for creating a tasting menu, a pairing, or any harmony is to first prepare the food, and then the sommelier is responsible for finding the perfect pairing for that dish. Under this premise, sommeliers are constantly looking for wines that suit the chef's style or cuisine, but very rarely, if ever, does the chef structure their food or dishes based on the wine,” explains chef Israel Aretxiga.
Thus, Terra's proposal is to create a menu that arises from the wine selection, where the chef becomes a complement to the gastronomic experience. Furthermore, the "tasting" menu also challenges the norms of fine dining, as diners can choose which courses to try and which to skip, as well as which pairings to revisit.
For the second edition of Terra, Andrés Rodríguez sommelier will guide diners through the world of wine, with a proposal of 12 pairings, ranging from the regions of Castilla y León to Catalonia.
Terra is a project in which we will invite the best sommeliers in the world to select the wines they want to present with the food that I will prepare following their instructions, and under the unstructured format of a fine dining tasting menu restaurant,” Aretxiga.
Andrés has managed the Cenador wine cellar for eight consecutive years, overseeing a collection of over 3,200 bottles and 800 different wines from around the world, with the excellence and responsibility demanded by a three-Michelin-starred restaurant, plus an additional star for its commitment to sustainability. Hailing from Cantabria, Spain, Andrés Rodríguez has established himself as one of the world's leading sommeliers, recognized by numerous guides.
The first edition of Terra featured Shua Ibañez, sommelier of Arzak, while for the third edition to be held in August, the arrival of Rodrigo Briseño, sommelier of the renowned Disfrutar restaurant in Barcelona, is expected.
