Materials
- 500 g of cultivated mushrooms (or small wild mushrooms)
- 3-4 cloves of garlic
- 1 teaspoon of salt
- 1 teaspoon of powdered sugar
- 1 teacup of vinegar (apple cider vinegar or grape vinegar)
- 1 tea glass of water
- 1 teaspoon whole black peppercorns
- 2-3 bay leaves
- Optional: 1 teaspoon red pepper or dill
Mushroom:
- Instead of cultivated mushrooms, you can use oyster mushrooms, shiitake mushrooms, or wild mushrooms.
- If you have larger mushrooms, you can cut them in half or thirds and add them to the pickles.
Vinegar:
- Instead of apple cider vinegar, you can opt for grape vinegar, pomegranate molasses, or white vinegar.
- For a milder taste, you can reduce the amount of vinegar slightly and mix it with water.
Spices and flavorings:
- You can use thyme, rosemary, or black pepper instead of bay leaves.
- You can optionally add 1-2 hot red peppers to make a spicy pickle.
- You can create different flavors by adding onion rings or green peppers instead of garlic.
Sweetener:
- Instead of granulated sugar, you can add honey or agave syrup, especially for a milder taste.
- If you prefer to make it without sugar, you can also make delicious pickles with just salt and vinegar.
Additional suggestions:
- To make the pickles more aromatic, you can add fresh dill or basil.
- You can create a different flavor by adding a small amount of lemon juice instead of water.
How to Do It
- Clean the mushrooms and, if necessary, halve any larger ones.
- Peel the garlic and leave it whole, or crush it lightly.
- Bring water to a boil in a saucepan, blanch the mushrooms for 1-2 minutes, then drain them.
- Place the mushrooms, garlic, black pepper, and bay leaf inside the jar.
- Mix the vinegar, salt, and sugar in a bowl, then pour it over the mushrooms. Add enough water to completely cover the mushrooms if necessary.
- Close the jar tightly and let it sit at room temperature for 1 day, then refrigerate. The pickles will be ready to eat in about 1 week. Enjoy!
- You can serve them at breakfast, as part of breakfast platters, or with appetizers at dinner.
- Pickled mushrooms can add a different flavor to green salads or pasta salads.
- You can serve it as a side dish with grilled meat or chicken.
- You can add both visual appeal and aroma by sprinkling finely chopped dill or fresh basil on top.
- Don't overcook the mushrooms; 1-2 minutes in boiling water is enough, otherwise they will soften and fall apart.
- Make sure the jar is completely clean and dry; this will ensure the pickles last longer.
- Pay attention to the vinegar and salt ratios; too much salt or vinegar can make the pickles taste bitter or sour.
- You can increase or decrease the amount of garlic and spices according to your taste.
- Leaving the pickles at room temperature for one day before refrigerating them allows the flavors to develop and prevents spoilage.
