- 400 gr pappardelle macaroni
- 300 gr minced meat (preferably beef or a mixture of beef and lamb)
- 2 tablespoons of olive oil
- 1 tablespoon of butter
- 1 large onion (finely chopped)
- 2 cloves of garlic (crushed)
- 1 carrot (grated)
- 1 celery stalk (finely chopped)
- 400 g chopped tomatoes (canned or fresh)
- 2 tablespoons of tomato paste
- 200 ml broth or water
- Half a cup of milk (optional, to soften the sauce)
- Salt
- Black pepper
- 1 teaspoon of thyme or Italian spice blend
- Half a cup of grated Parmesan cheese
- Fresh basil or parsley (for serving)
Method · 2 h 30 min
- 1. Heat olive oil and butter in a large saucepan.
- 2. Add the onions, garlic, carrots, and celery and sauté for 5-6 minutes, or until softened.
- 3. Put the minced meat in a pan and sauté until it changes color.
- 4. Add the chopped tomatoes, tomato paste, salt, pepper, and thyme/Italian seasoning.
- 5. Mix.
- 6. Add the broth or water.
- 7. Simmer over low heat with the lid closed for 1–1.5 hours.
- 8. Stir the sauce occasionally as it thickens.
- 9. If desired, you can soften the sauce by adding milk 15 minutes beforehand.
- 10. Bring a large pot of plenty of salted water to a boil.
- 11. Boil the pappardelle until al dente.
- 12. Strain and mix with the sauce.
- 13. Sprinkle with grated Parmesan cheese and fresh basil or parsley.
