How to Do It

  • Preheat the oven to 200°C and lightly grease the soufflé dishes with butter, then flour the insides.

  • Whisk the egg yolk and the whole egg together, add to the melted chocolate mixture, and mix until a homogeneous mixture is obtained.
  • In a separate bowl, whisk the egg whites and a pinch of salt until frothy, then gradually add the sugar.
  • Add the beaten egg whites to the chocolate mixture, folding them in from bottom to top with a spatula, being careful not to deflate them too much.
  • Divide the mixture into soufflé dishes and bake in a preheated oven for 12-15 minutes.
