For 4 people

Materials

  • 125 g butter (at room temperature)
  • 1/2 cup powdered sugar
  • 1 egg
  • 1 cup of shredded coconut (can be increased)
  • 1.5 cups of flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • a pinch of salt

Alternatives to Butter:

  • You can use margarine or coconut oil instead of butter.
  • For a lighter version, you can opt for light butter or vegetable oil (the texture of the dough may change slightly).

Sugar Alternatives:

  • Instead of granulated sugar, you can use brown sugar or coconut sugar; this will add a light caramel flavor to the cookies.
  • You can make a less sweet cookie by reducing the sugar.

Flour Alternatives:

  • You can make more nutritious cookies by using whole wheat flour or almond flour instead of white flour.
  • Gluten-free versions can be made using gluten-free flour mixes.

Egg Alternatives:

  • If you don't want to use an egg, you can use 1 mashed ripe banana or ¼ cup mashed apple as a binder in place of the egg.

Coconut Alternatives:

  • You can create different flavors by mixing it with grated almonds or hazelnuts.
  • You can also add pieces of dried fruit (e.g., dried cranberries) to the cookies to enhance both texture and flavor.

Flavoring Additives:

  • You can create different flavors by adding 1 teaspoon of grated orange or lemon zest instead of vanilla.
  • You can add extra flavor and color with cinnamon or cocoa.

How to Do It

  • Preheat oven to 170°C (160°C with fan). Line a baking tray with parchment paper.
  • Cream together the room temperature butter and powdered sugar using a mixer until light and fluffy.
  • Add the egg and vanilla extract and whisk until you have a smooth mixture.
  • Sift the flour, baking powder, and salt into the mixture. Add the grated coconut. Gently mix from bottom to top with a spatula.
  • Tear off walnut-sized pieces of dough and place them on the baking sheet, leaving space between them. If desired, you can gently press down on the tops of the cookies to flatten them.
  • Bake in a preheated oven for 12–15 minutes, or until the cookies are golden brown.
  • After removing from the oven, let it sit on the baking tray for 5 minutes, then cool completely on a wire rack.
  • You can serve the cookies warm or at room temperature with tea or coffee.
  • You can store them in small glass jars and give them as gifts or offer them to your guests.
  • You can enhance their visual appeal by sprinkling them with powdered sugar or dipping them in melted chocolate.
  • Arranging the cookies on a dessert plate and serving them with dried fruit and nuts makes for an elegant presentation.
  • Using room temperature butter will result in more even and soft cookies.
  • Whether the shredded coconut is fresh and dry directly affects the flavor of the cookies.
  • Letting the cookies sit on the baking sheet for a few minutes after taking them out of the oven will prevent them from losing their shape.
  • Leaving them in the oven too long can cause the cookies to become hard; baking them until golden brown is ideal.
  • Avoiding overmixing the dough ensures the cookies remain light and soft.
