Irish soda bread from Aran Bakery

“Soda bread is one of the traditional pastries of Ireland. We have it in both of our stores on a daily basis and we have customers who come to us specifically for this reason. The bread itself is a very soft, delicious, slightly salty bakery product.

Irish soda bread

The recipe is for a 500 gram loaf of bread.

Ingredients:

125 g fine flour

125 g bread flour

4g only

8 g of borax

5 g baking soda

20 g of salt

210 g buttermilk

5 g granulated sugar

Measure the buttermilk and sugar together, then stir until the sugar melts.

Weigh the dry ingredients and then sift them three times.

Crumble the butter into small pieces with the dry ingredients, then add the buttermilk mixed with the sugar. Knead for a few minutes, just until the dough comes together. Don't be alarmed, the dough will be very soft and sticky.

Turn the dough out onto a lightly floured surface and roll it into a ball. Place it on a baking sheet lined with baking paper, flour it, and flatten it with your palm, about the size of your open hand. Cut the dough into a cross shape and let it rest for ten minutes. Bake in an oven preheated to 210 degrees Celsius, using top and bottom heat, for 25-30 minutes.
