Filipino chicken adobo

Adobo is one of the most famous Filipino dishes. The name refers to the marinating process that takes place in a vinegary sauce seasoned with soy and garlic. Try it on not only chicken but also pork or tofu!

Ingredients · Servings 4
  • about 600 g boneless chicken fillets
  • 1¼ dl white wine vinegar
  • ¾ dl soy sauce
  • 3 bay leaves
  • 4 garlic cloves
  • 2 living rooms in Puglia
  • 2 garlic cloves
  • 2 tablespoons rapeseed oil
  • 3 dl water
  • 2 tablespoons brown sugar
  • 1 tablespoon whole black pepper
  • 2 spring onions
Method · 10 min
  1. Place the chicken pieces in a bowl. Add the vinegar, soy sauce and bay leaves. Grate the garlic cloves. Turn the chicken pieces in the marinade and leave to marinate for 30 minutes or overnight in the refrigerator.
  2. Chop the onions and garlic cloves.
  3. Heat oil (1 tbsp) in a pan. Brown the chicken on both sides. Save the marinade.
  4. Remove the chicken from the pan. Add the remaining oil (1 tablespoon) to the pan and fry the onions for about a minute.
  5. Pour the marinade into the pan. Add water, sugar and black pepper. Cook for 5 minutes.
  6. Return the chicken to the pan. Cook over low heat for 15 minutes. Turn the chicken and continue cooking for another 5–10 minutes.
  7. Turn the chicken all over in the sauce and sprinkle with chopped spring onions. Serve with rice.

Chicken adobo takes you on a culinary journey to the Philippines. Adobo is a well-known dish in the island nation. It can also be easily prepared in the home kitchen. Try this if you feel like you always make the same dishes with chicken.

The chicken is marinated in a sauce flavored with vinegar, soy, and garlic. The word adobo refers to marinating. If you want the chicken to be especially flavorful, you should let it marinate overnight. Quick marinating takes half an hour. The marinade uses typical Filipino spices, bay leaves, and soy.

You can easily make a vegetarian version of this recipe by swapping the chicken for tofu. You can change the meat version by replacing the chicken with pork. The chicken adobo is served with rice.
