1. Fried pike perch and crab potatoes
Pikeperch is a highly regarded food fish and a perfect choice for the finest dining moments of spring. Dive into new waters and conjure up a top-notch restaurant-quality taste experience from pikeperch with the instructions of star chef Tommi Tuominen. The fried pikeperch is served with crab potatoes, cucumber and kohlrabi salad and pan-fried malt bread.
The inspiration for the pike perch delicacy is a dish that Tuominen prepared at the Finnish Bocuse d'Or qualifiers in 2017. The tightest corners in the recipe have been straightened out, but it still doesn't come off as easy.
2. Cherry tomatoes and tomato broth
Now we're making the most of the delicious taste and beautiful appearance of cherry tomatoes. The taste experience designed by star chef Anni Peräkylä includes cherry tomatoes in many forms: dried, marinated and pureed. The tomato's flavor pair is the familiar basil, this time transformed into mayonnaise. Pickled jalapeno and onion give the dish the final touch.
Cherry tomatoes were one of the main ingredients in the 2021 Bocuse d'Or competition. Peräkylä worked as an assistant to star chef Mikko Kaukonen in the competition. The duo created stunning masterpieces from cherry tomatoes, which inspired Peräkylä to create an easier version.
3. Beef tenderloin and Brussels sprouts seasoned with lemon miso
Roasting beef tenderloin takes a little effort, but the taste experience it offers is worth it. In the dish designed by star chef Petteri Luoto, beef tenderloin is served with Brussels sprouts, mashed potatoes and sautéed mushrooms.
If you haven't lost your heart to Brussels sprouts yet, this dish will change that. Deep-fried until crispy and seasoned with lemon miso, the Brussels sprouts are so heavenly that even a squeamish person will turn their backs.
Petteri Luoto has represented Finland in the Bocuse d'Or competition twice. In 2005, Luoto was awarded the best meat dish in the competition, which is why he designed this easier version.
