Lemon yogurt polenta cake

This lemon spring cake stays moist and juicy for a few days. The secret to the texture is in the Turkish yogurt and polenta grains.

Ingredients · Servings 8
  • 3 kananmunaa
  • 2 dl sokeria
  • 150 g voita
  • 1½ dl turkkilaista jogurttia
  • 3 sitruunan kuori hienona raasteena
  • 1½ dl sitruunamehua (2–3 sitruunasta)
  • 1½ dl polentaryynejä
  • 2 dl vehnäjauhoja
  • 1 tl leivinjauhetta

  1. Aloita kakun valmistus vatkaamalla kananmunat ja sokeri kuohkeaksi vaaleaksi vaahdoksi.
  2. Sulata voi kattilassa. Anna jäähtyä hetki.
  3. Lisää voin joukkoon turkkilainen jogurtti, hyvin pestyjen sitruunoiden kuori hienona raasteena ja sitruunamehu. Sekoita tasaiseksi.
  4. Sekoita kuivat aineet keskenään.
  5. Lisää jogurttiseos kananmunavaahtoon hellävaraisesti nuolijan avulla sekoittaen.
  6. Lisää lopuksi kuivat aineet, vähän kerrallaan nuolijalla samalla sekoittaen.
  7. Kaada taikina voideltuun ja jauhotettuun, halkaisijaltaan 20–22 cm:n kakkuvuokaan. Taikina voi tässä vaiheessa tuntua löysähköltä, mutta polenta turpoaa kypsyessään reilusti.
  8. Paista kakkua 175-asteisessa uunissa 30–40 minuuttia. Kakku saa jäädä rakenteeltaan hieman kosteaksi.
  9. Anna kakun jäähtyä hyvin ennen vuoasta irrottamista.

Polenta, used especially in Italy, is a very versatile ingredient. It is traditionally made from cornmeal and can be used in both savory dishes and baking. To Finns, its texture may resemble semolina.

The lemon cake is made by beating the eggs and sugar until fluffy. Turkish yogurt, mixed with melted butter, adds a delicious tartness and richness to the cake.

To make the cake as lemony as possible, use the yellow zest and juice of the lemon. Remember to wash the lemons thoroughly before grating the zest!

The polenta is added to the dough with the other dry ingredients. Don't be alarmed if the dough still feels loose at this point. As it cooks, the polenta will swell considerably, making the cake quite firm. However, it should still be slightly moist in texture.
