Chicken casserole. Grandma's traditional recipe
Chicken casserole is one of those recipes that reminds us of our childhood because, as many of you probably know, your grandmother or mother used to make it. So today we're going to prepare a delicious chicken casserole.

- 1 chicken, cut into pieces
- 1 clove of garlic
- 1 onion
- 1 carrot
- 200 ml of crushed tomatoes
- 1 teaspoon of paprika
- 1 teaspoon of flour
- 300 ml of chicken broth

- The first step is to cut the chicken into pieces (or skip this step if it's already cut), and we're going to sauté it over high heat in a saucepan, after seasoning it with salt and pepper. Once it's browned, remove it and set it aside.
- In that same saucepan we're going to make the sofrito, sautéing the garlic, onion and carrot.
- After 10 minutes we add the crushed tomatoes and cook for another 10 minutes.
- Now it's time to add the flour and paprika, cook for a few seconds, and cover with the chicken broth. We'll also add back the chicken that we seared earlier.
- We peel and fry some diced potatoes.
- Cook everything together for about 20-25 minutes until the chicken is cooked through. At this point, you can add aromatic herbs such as bay leaf, thyme, parsley, or whatever you have on hand.
- Five minutes before it's done, add the fried potatoes so they soak up the broth. You can add them separately, but my grandmother used to add them to the chicken casserole.
For this chicken casserole recipe, it's important to use a quality chicken. Why do I say this? Because I always recommend quality chickens, free-range or organic, as the difference is enormous and the flavor is wonderful. When you buy the typical cheap chicken from the supermarket, it ultimately tastes like nothing.
Regarding the vegetables, I always like to use the classic sofrito of onion, garlic, tomato, and carrot, but you can use whichever you prefer. I'm giving you my recipe, and you can adapt it from there.
