Tablafina Córdoba: Andalusian tradition takes its place at the table of the new NH Collection Palacio de Córdoba
The hotel, located in the heart of the Jewish Quarter and built upon a collection of 17th- and 18th-century noble houses—and even on the remains of the ancient city wall and vestiges of a Roman domus—has undergone a complete restoration, transforming it into a five-star establishment where heritage and contemporary design coexist in perfect harmony. Within this historical and architectural context
The space unfolds across three Cordoban courtyards—the Patio de Petra, the Patio Mudéjar, and the Patio del Compás—which shape the experience from the entrance on Plaza de Maimónides to the tables. Brick arches, vegetation, natural light, and centuries-old walls frame a gastronomic offering that finds a narrative ally in its surroundings: here, the cuisine speaks the same language as the architecture, that of reinterpreted memory.
Inspired by the world of Spanish taverns and bars, the Tablafina concept relies on familiar ingredients and the pleasure of well-prepared products. The menu features Iberian cured meats, select preserves, and a carefully curated selection of Spanish cheeses, a celebration of traditional recipes that connects with diners on an emotional level. But it is in the 'Cordoban Essence' section where the restaurant truly establishes its regional roots.
Iconic dishes like salmorejo, boneless oxtail, and special flamenquín are presented with precise execution and a contemporary aesthetic, respecting traditional flavors and techniques while refining textures and presentations. To this foundation are added the chef's suggestions, which incorporate seasonal products and offer a modern interpretation of Andalusian cuisine, expanding the repertoire without losing its identity.
With seating for around 90 diners, Tablafina Córdoba is designed as a versatile space: from casual tapas to more leisurely meals in a unique heritage setting. The wine list is carefully curated to complement both local classics and more creative dishes, enhancing the overall experience.
The opening in Córdoba consolidates Tablafina's expansion as a culinary brand within Minor Hotels. The concept is already present at NH Nacional (Madrid), NH Málaga, NH Sevilla Plaza de Armas, and NH Collection Barcelona Gran Hotel Calderón, where it has demonstrated its ability to adapt to each location, incorporating products and touches specific to each region. In Córdoba, this adaptation involves a clear immersion in Andalusian tradition and the flavors that define the city.
Beyond the kitchen, Tablafina is part of a strategy that places gastronomy at the heart of the hotel experience. The renovated NH Collection Palacio de Córdoba not only recovers the architectural splendor of an 18th-century palace, with historic courtyards, a neoclassical façade, and remnants of the city wall integrated into the design, but also makes the table a fundamental element for connecting the traveler with the destination.
In a city where culinary tradition is a living heritage, Tablafina Córdoba presents itself as a bridge between past and present: a contemporary tavern framed by centuries of history, where seasonal produce and local recipes find a new expression without losing their authenticity. This opening strengthens Córdoba's gastronomic scene with premium hospitality, yet with a welcoming spirit for the city.
