Peach salad with crispy halloumi bites

This grilled peach salad with crispy halloumi-sesame bites combines sweet, salty, fresh, and slightly spicy flavors. The peaches are grilled until nicely browned, giving them a wonderful roasted aroma. A fresh dressing with lemon and sumac, along with mint and parsley, perfectly complements this summery salad.

Method
  1. Cut the peaches into wedges and grill them in a hot grill pan on both sides until nicely browned. Cut the grilled peach wedges into bite-sized pieces.
  2. Mix the olive oil with the lemon juice, sumac, salt, and pepper. Add the still slightly warm peach pieces and mix everything gently.
  3. Roughly chop the mint and parsley and fold them in just before serving.
  4. Cut the halloumi into small cubes. Mix the light and black sesame seeds in a shallow bowl. Put the flour in a second bowl and whisk the egg in a third bowl.
  5. First coat the halloumi cubes in flour, then in egg, and finally in the sesame mixture.
  6. Heat the olive oil in a pan and fry the cubes until golden brown and crispy on all sides. Alternatively, you can also bake them in an air fryer until crispy.
  7. Mix the honey with the chili-infused olive oil, salt and pepper, and heat the mixture briefly.
  8. Place some grilled peach salad on a small plate or in a bowl. Add some halloumi cubes and drizzle with a little chili oil and honey.

Alternatively, you can crisp them up in an air fryer.
