Peel, wash, and roughly chop the potatoes. Wash the celery and roughly chop, including a few leaves. Peel a clove of garlic and place everything in a pot, add water, and boil until the potatoes are tender.

Drain the vegetables slightly (reserving the cooking water until the end) and blend everything with a food processor. Halfway through blending, add the grated cheese and season with extra virgin olive oil, salt, and pepper. Blend everything again until you have a fairly thick cream, then transfer to a piping bag.

Cut the Primo salami, first into slices and then into cubes. Pour the potato and celery cream into elegant jars or glasses, then arrange the salami pieces and a rosemary leaf in the center. Serve with breadsticks.
