Prepare a tart pan.

Fold each slice of prosciutto and insert it into the molds, giving it the shape of a tartlet.

Blanch the young butcher's broom shoots and insert two pieces into each tartlet.

Add some mozzarella on top.

Place in a hot oven at 180°C and cook until the mozzarella melts and the prosciutto has formed a light crust.

Remove from the molds and leave to cool on a cloth to absorb excess fat.

Serve on a tray or serving platter.
