Saffron Paccheri with Prawns

- 350 g Paccheri
- Extra virgin olive oil
- 1 glass of white wine (13% vol)
- 300 ml liquid fresh cream
- 1 pinch Saffron (in threads)
- 1 clove garlic

First, let's clean the shrimp. We can leave some with the tails on so we can use them for plating.
Let's dissolve the saffron threads by placing them in white wine for 10 minutes.
In a large skillet, drizzle a little oil and sauté the garlic until golden. Add the shrimp and cook over medium heat, stirring frequently.
Add the wine and let it evaporate. Season with salt and pepper and add the cream.
A yellow cream will form which will be ready when it thickens to form our dressing.
Boil the paccheri in plenty of salted water, drain, and toss them in the pan with the sauce. Toss over high heat and serve immediately!
