Whipped Shortbread Biscuits
Procedure
- 150 g 00 flour
- 70 g Potato starch
- Egg
- 80 g icing sugar
- 1 teaspoon baking powder
- 1 sachet of vanilla
- 100 g dark chocolate
- Colored sprinkles
- 150 g Butter

The butter we use must be soft, so take it out of the fridge at least an hour or two before using it.
Beat the butter with an electric mixer and add the powdered sugar until it becomes a frothy cream.
Then add the eggs, one at a time, and the sifted flours: flour, starch, baking powder and vanilla.
Transfer the mixture to a piping bag with a star-shaped nozzle and create circles, “S”s, or any shape on a sheet of baking paper placed on a baking tray.
Bake at 180°C for 10-15 minutes, until the edges of the cookies begin to brown. Remove from the oven and let them cool completely!
To decorate, melt 100g of chocolate (your favorite) in a bain-marie, dip the biscuit tips in it, and sprinkle them with coconut flour or colored sprinkles!
Place them on a sheet of baking paper on a plate or baking sheet and put them in the refrigerator to cool for 15 minutes or leave them at room temperature on a wire rack!
