  • 1 teaspoon baking powder
  • 1 teaspoon Liquid vanilla extract
  • 250 g organic 00 flour
  • 60 g brown sugar
  • 120 g Butter
  • Egg
  • Egg white
  • 1 jar of raspberry jam
  • Pine nuts

Mix all the ingredients in the food processor until well combined (a few minutes to avoid heating the dough too much).

Form a ball, wrap it in cling film and place it in the refrigerator for an hour.

Once the resting time has elapsed, remove it from the refrigerator and roll it out with a rolling pin.

Line the bottom of a 24cm tart pan with a loose-bottomed pastry base lightly greased with butter spray.

Prick the bottom with a skewer or the prongs of a fork. Refrigerate for another hour.

Cover with your favorite jam and sprinkle with pine nuts.

Bake at 180°C for about 20 minutes in a fan oven.

Let it cool then unmold.
