Recipe for pasta with beetroot sauce, submitted by Celia Miranda

1. Put the water in a saucepan to heat.

Ingredients · Servings 5
  • 250g of pasta of your choice
  • 10 walnuts
  • 2 tablespoons of balsamic vinegar
  • 2 beets
  • 1 red pepper
  • 1 clove of garlic
  • cheese
  • oil
  • Salt and pepper to taste
Method · 35 min
  1. Put the water in a saucepan to heat.
  2. Peel the beets and cut them into cubes.
  3. Place the beets, balsamic vinegar, walnuts, salt (to taste), black pepper (to taste), frozen red pepper, and olive oil in a blender.
  4. Beat slowly, stopping occasionally to add the olive oil.
  5. Add the peeled garlic clove and more olive oil. Blend again.
  6. Taste the sauce to check the salt level.
  7. Pour the sauce into a saucepan.
  8. Add salt to the boiling water in the pot and cook the pasta. Fettuccine is a great option for this recipe.
  9. Grate the cheese and place it in a container.
  10. When ready, add the pasta to the pan with the sauce and mix.
  11. Serve the pasta with the grated cheese.
