To prepare the orecchiette with saffron potato cream, sausage, and walnuts: Peel and dice the potatoes, then boil them in plenty of water. Cook for about ten minutes, then add the saffron and salt and blend with an immersion blender. Set aside. Meanwhile, bring a pot of water to a boil. Cook your favorite pasta shape and drain when al dente.

Clean the onion, chop it finely and remove the skin from the sausage.

Brown the crumbled sausage in an oiled pan with a chopped onion, season with salt and pepper, and finally add the walnuts. Add the pasta, potato puree, and grated cheese, and stir over medium heat.

If necessary, add a little of the pasta cooking water and top the pasta with the saffron potato cream, sausage, and walnuts, with parmesan cheese if you like. ENJOY YOUR MEAL!!!
