Recipe for Tagliatelle Carbonara, submitted by Iran Carlos Stalliviere Correa

1. In a bowl, mix the butter and olive oil.

Ingredients · Servings 4
  • 400 g of tagliatelle
  • 2 tablespoons of butter
  • 3 tablespoons of olive oil
  • 3 eggs
  • 3 tablespoons of grated Parmesan cheese
  • 3 tablespoons of bacon
  • 4 tablespoons of heavy cream
  • Fresh herbs (parsley and chives) to taste
  • Salt and pepper to taste
Method · 40 min
  1. In a bowl, mix the butter and olive oil.
  2. Add the green seasoning, salt, and pepper.
  3. Mix everything very well until a cream forms.
  4. Reserve.
  5. In another bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese.

  7. In a deep pot of boiling water, cook the tagliatelle until al dente.
  8. While the tagliatelle is cooking, fry the chopped bacon in a pan with a drizzle of olive oil until golden brown.
  9. Once the tagliatelle is cooked, drain the water.
  10. Add the fried bacon, butter cream, and beaten eggs.
  11. Mix everything very well and serve immediately.
