1. The day before roasting, season the chicken thighs by mixing them with all the ingredients (use crushed or finely chopped garlic).

- 1 kg of chicken thighs
- 1/2 cup (coffee cup) of lime juice
- Fresh thyme to taste
- 1 tablespoon of garlic
- Salt to taste

- The day before roasting, season the chicken thighs by mixing them with all the ingredients (use crushed or finely chopped garlic).
- Store in a tightly sealed container and keep refrigerated.
- To bake, place the chicken thighs in a baking dish with the skin side down, pour all the seasoning over them, and cover with aluminum foil.
- Bake at 180°C for approximately 1 hour and 30 minutes.
- Check if they are cooked through (not browned).
- Remove the aluminum foil, turn the skin side up, and return it to the oven to brown.
- To brown, increase the oven temperature to 200°C.
- They will be ready when they are nicely browned.
- 2. Store in a tightly sealed container and keep refrigerated.
- 3. To bake, place the chicken thighs in a baking dish with the skin side down, pour all the seasoning over them, and cover with aluminum foil.
- 4. Bake in the oven at 180°C for approximately 1 hour and 30 minutes.

- 6. Remove the aluminum foil, turn the skin side up, and return to the oven to brown.
- 7. To brown, increase the oven temperature to 200°C.
