Vegetable tortilla with salsa brava

On the menu today is a vegetable tortilla with salsa brava. A nod to your sunny holiday on the Costa. Jet shares her recipe in Lekker Snel!

Ingredients · Servings 4 people
  • 1 ui
  • 4 cloves of garlic
  • 5 tablespoons extra virgin olive oil
  • 2 sweet pointed peppers
  • 250 g potato slices
  • 200 g spinach
  • 8 eggs
  • 2 tsp smoked paprika powder
  • 1 tsp chili powder
  • 2 tablespoons tomato paste
  • 1 can of diced tomatoes
  • 1 tbsp red wine vinegar
  • 250 ml Greek yogurt
  • 10 g chives
  • snack pan with lid
Method · 30 min
  1. Cut the onion into half rings. Finely chop the garlic cloves.
  2. Heat 2 tablespoons of olive oil in the sauté pan and sauté the onion and garlic over low heat.
  3. Meanwhile, halve the pointed peppers lengthwise, remove the seeds, and cut the flesh into half rings. Add the peppers to the pan and fry for 3 minutes.
  4. Stir in the potato slices and fry for another 3 minutes.
  5. Meanwhile, beat the eggs in a large bowl. Season to taste with salt and pepper.
  6. Add the spinach to the pan in batches and let it wilt while stirring.
  7. Add the vegetables to the bowl with the egg and mix well. Heat the remaining olive oil in the pan. Pour the egg mixture into the pan. Cook until golden brown in 8-10 minutes with the lid on the pan.
  8. Place a large plate upside down on the tortilla and turn the tortilla, pan and all, onto the plate. Slide the tortilla back into the pan and fry the other side until golden brown in 5-8 minutes.
  9. Carefully slide the tortilla onto a large plate or board. Serve with the salsa brava and yogurt sauce.
  10. Heat the olive oil in a small pan.
  11. Peel the garlic. Sauté the whole garlic cloves with the paprika and chili powder for 3 minutes over low heat.
  12. Remove the garlic cloves and discard. Add the tomato paste and fry for 1 minute.
  13. Add the diced tomatoes and red wine vinegar. Season to taste with salt and pepper and let simmer over low heat for 5 minutes.
  14. Spoon the Greek yogurt into a bowl. Finely chop the chives and stir into the yogurt. Season to taste with salt and pepper.

A real Spanish tortilla consists only of egg and potatoes. But you often see variations where onion and vegetables are added as well. It is actually a super handy way to use up all the leftovers from your vegetable drawer.
