Traditional chocolate mousse

- 200 g dark chocolate 70%
- 100 g butter
- 6 egg yolks
- 6 Protein
- 100 g sugar
- 1 pinch of salt
- extra virgin olive oil
Method · 15 min
- Melt the butter with the chocolate in a saucepan using a bain-marie.
- Meanwhile, beat the egg whites with half of the sugar until stiff peaks form.
- In a clean bowl, beat the egg yolks with the remaining sugar until a creamy mass is formed and the volume has doubled.
- Mix the chocolate mixture with the beaten egg yolks. Mix until a homogeneous mass.
- Add ⅓ of the egg whites to the chocolate mixture and mix well.
- Gently fold the remaining ⅔ of the whipped egg whites into the chocolate mixture until fully incorporated.
- Pour the chocolate mousse into a large bowl and place it in the refrigerator for at least 4 hours to set.
- When serving, spoon a generous amount onto a plate or into a glass. Drizzle with a little extra virgin olive oil and sprinkle with some Maldon salt.
