Traditional chocolate mousse

Want to make your own chocolate mousse? Try the traditional recipe: creamy, smooth, and real dark chocolate. That is the best way to sum up this dark chocolate mousse.

Ingredients · Servings 4 people
  • 200 g dark chocolate 70%
  • 100 g butter
  • 6 egg yolks
  • 6 Protein
  • 100 g sugar
  • 1 pinch of salt
  • extra virgin olive oil
Method · 15 min
  1. Melt the butter with the chocolate in a saucepan using a bain-marie.
  2. Meanwhile, beat the egg whites with half of the sugar until stiff peaks form.
  3. In a clean bowl, beat the egg yolks with the remaining sugar until a creamy mass is formed and the volume has doubled.
  4. Mix the chocolate mixture with the beaten egg yolks. Mix until a homogeneous mass.
  5. Add ⅓ of the egg whites to the chocolate mixture and mix well.
  6. Gently fold the remaining ⅔ of the whipped egg whites into the chocolate mixture until fully incorporated.
  7. Pour the chocolate mousse into a large bowl and place it in the refrigerator for at least 4 hours to set.
  8. When serving, spoon a generous amount onto a plate or into a glass. Drizzle with a little extra virgin olive oil and sprinkle with some Maldon salt.
