Stir-fried noodles with sausage

- San Fernando Chicken Sausages
- 300 grams of noodles
- Sillao
- Water
- 1 tablespoon of chuño or cornstarch
- Chopped garlic
- 1 onion, sliced
- ½ yellow chili pepper, sliced into strips
- 1 tomato, sliced

- Chopped scallions

- Slice the chicken sausages and fry them in a little oil. Set aside.
- Cook the noodles in boiling salted water until al dente. You can check the noodle package for the recommended cooking time.
- Separately, prepare a mixture with one part soy sauce, four parts water, and a tablespoon of cornstarch or potato starch. This mixture will make the stir-fried noodles juicy.
- Heat a drizzle of vegetable oil and sesame oil in a large frying pan. Brown the chopped garlic, then add half the onion and all the yellow chili pepper.
- Add the soy sauce mixture and let it boil.
- Add the chopped cilantro, sausages, and half the tomato. Season with salt and pepper to taste.
- Finally, add the remaining half of the onion and tomato, and the cooked noodles. Mix well and sprinkle with chopped scallions.
- Serve immediately.
