What is the Michelin green star?

Trivvu, a Michelin experience in Mexico City

One of the renowned chefs who has won this prestigious award is the Spanish chef, Miguel Ángel de la Cruz. The chef of “La Botica” has made a name for himself in the culinary world as an activist chef, especially for his research into the harvesting and use of wild fruits in cooking.

At “La Botica” in Matapozuelos, he has tested techniques, products, and flavors that emphasize sustainability and the utmost respect for nature. This appealed to the Trivvu team from the W Hotel in Mexico City, who appreciate its attractive rooftop terrace in Polanco.

Chefs De la Cruz and Matías Gallegillo, chef of Trivvu, designed a menu based on the principles of the Michelin green star. The pop-up is a unique experience, a menu designed by a Michelin-starred chef in Mexico.

The menu is inspired by the principles of food sustainability, so everything is used. Even the cocktails are made with ripe tangerines that would likely go unused in cooking, to create a syrup with an intense flavor that's perfect for these drinks.

The plating is beautiful and meticulous; the interplay of textures and flavors floods the palate with sensations. The Michelin experience at Trivvu is an excellent choice if you're looking for an extraordinary gastronomic event.

Appetizer: The Plum (Chicken and lamb liver pâté covered in a prune jelly)

1st Course: Fresh Hamachi with citrus (with pesto, cabbage, miso butter and citrus foam).

1st Course: Smoked Cauliflower and Fermented Garlic.

Strong: Free-range steak, bridal veil and edible flowers (with toasted almond puree).

Final: Dried fig mousse, red berries, rum cream and vanilla crisp.

Extra: a welcome cocktail and a glass of wine.
