Conatvs Wineries: Between Wines and Volcanoes, Fuerteventura
In the north of Fuerteventura, where the wind never rests and the ground is covered in volcanic ash, one of the most unique winemaking adventures in the Canary Islands has been born. Bodegas Conatvs, located in Lajares, does more than just make wine: it tells a story of faith, memory, and deep roots.
The project is the brainchild of Pedro Antonio Martín Hernández, the restaurateur behind La Luna restaurant and now also the driving force behind this winery, which inaugurated its new facilities on May 9th in a moving event attended by local authorities, residents, artists, and friends. The grapes took center stage thanks to a theatrical performance in which local varieties like Malvasía and Baboso Negro "spoke" to the audience about their origins, their struggle against the wind, and their connection to the island.
An underground cathedral carved out of lava
The new facilities, totaling over 600 square meters, are striking for their integration with the surrounding environment. In addition to the wine bar and the volcanic terraces with their breathtaking views, the winery's jewel lies underground: a cellar carved directly into the volcanic rock, where the barrels rest silently, surrounded by constant temperature and humidity. There, the wine slumbers in a mineral temple that seems to be part of the volcano itself.
This design is not only spectacular, it's also functional. The visit allows you to explore the different spaces while enjoying a tasting next to the vineyard and appreciating how the sea, wind, and lava have shaped an extreme viticulture. The result is wine tourism that goes beyond simply visiting wineries: here, you experience the landscape.
Wines with their own voice
Conatvs wines strive to be unique. Their approach is a declaration of identity. The white Airam, made with Listán Blanco, Malvasía, and Diego grapes, stands out for its Atlantic profile: saline, citrusy, with a mineral undertone. Ideal for ceviche, seafood, or simply for toasting at sunset overlooking the ocean.
The Conatvs Pink rosé captivates with its raspberry color and its fruity, luscious, and refreshing palate. It's perfect with rice dishes, spicy dishes, or as a welcome drink. And then there's the Baboso Negro red, a deep, structured, single-varietal wine that won the Grand Gold Medal at the Mondial des Vins Extrêmes. The winery is advised by winemaker Alberto González Plasencia, an undisputed leader in the new volcanic wines of the Canary Islands and also responsible for projects such as Bodega Timanfaya in Lanzarote.
