Raspberry lemonade

  • 200 Fresh Raspberries
  • 120 Cane sugar
  • 2 Citron
  • 25 cl Water
  • 60 cl Sparkling Water
Method · 10 min
  1. Pour the water into a small saucepan, then add the cane sugar. Heat over medium heat, stirring regularly to dissolve the sugar completely and obtain a smooth mixture. Let it simmer for a few minutes until the liquid becomes clear and slightly syrupy. Then remove the saucepan from the heat and let it cool slightly before continuing with the recipe.
  2. Squeeze the lemons to extract the juice, taking care to remove any seeds. Add this juice to the still-warm syrup, then stir in the fresh raspberries. Mix gently so that the fruit begins to release its color and aroma. This step gives the lemonade its beautiful pink hue and its fruity, bright, and indulgent flavor.
  3. Thoroughly blend the syrup, raspberries, and lemon until smooth. Make sure to remove any large pieces of fruit to ensure a consistent lemonade base. This will create a fragrant, colorful, and intensely fruity concentrate, which will serve as the base for the drink before adding sparkling water.
  4. Place a fine-mesh strainer over a large pitcher, then pour in the blended mixture. Use a spoon to gently press the pulp and extract as much juice as possible, while retaining the small raspberry seeds. This will give you a more pleasant lemonade to drink, with a smoother texture, while preserving all the fruit flavor.
  5. Pour the sparkling water into the carafe containing the filtered base. Gently stir with a large spoon to evenly distribute the flavors without deflating the bubbles too quickly. Taste if necessary to check the balance between the lemon's acidity, the sugar's sweetness, and the raspberry aroma. The drink should be chilled, light, and refreshing.
  6. Place the carafe in the refrigerator for at least 2 hours so the lemonade is nice and cold and the flavors have time to meld. When ready to serve, pour the lemonade into glasses or serve it directly from the carafe at the table. You can add a few extra raspberries for an even prettier, summery presentation.
