One-pot pasta with chicken and tomato sauce

- 1 onion
- 2 cloves garlic
- 250 g chicken breast
- 4 tbsp sunflower oil
- 400 g canned tomatoes, chopped
- 200 g tomato passata - puree
- 200 ml chicken broth
- 200 g fusilli
- 2 tsp Italian herbs
- salt
- 1 pinch pepper
- 125 g mozzarella
- basil
Method · 30 min
- Peel and finely chop the onion and garlic. Cut the chicken into 2.5 x 2.5 cm cubes and fry in a pan with sunflower oil for about 2 minutes until browned on all sides.
- Meanwhile, add the onion and garlic and sauté briefly. Add the chopped tomatoes and passata and reduce the heat slightly. Add the stock or water, add the pasta and mix well.
- Meanwhile, add the Italian herb mixture, salt and pepper. Cover the pan with a lid and cook over low heat for about 8 to 11 minutes until the pasta is cooked. Add a little more liquid if necessary.
- Meanwhile, dry the mozzarella and cut it into 1 cm cubes. Add it about halfway through the cooking time and mix well. Wash the basil, dry it or tear it from the stems and chop it roughly. Season with salt and pepper as needed and serve sprinkled with basil. Source: Das Kochrezept
