Fried rice with eggs
If you're looking for a quick, cheap and delicious dinner, then you've found it. Simply stir-fry vegetables with rice and soy sauce and you have a great one-pan meal.
Ingredients · Servings For 6 people
- 500g rice
- 100 ml vegetable oil
- 4 eggs
- 1 onion
- 2 tbsp ginger (fresh)
- 2 tsp pepper
- 250 g frozen vegetables
- 1 tbsp dark soy sauce
Method · 35 min
- Bring 2 liters of water to the boil, add the rice, stir gently and cook for 10 minutes on high heat. Drain the excess liquid and let the rice cool. While cooling, stir it occasionally with a fork to prevent it from sticking together.
- Heat 50 ml of oil in a large wok, crack 2 eggs into it and mix quickly.
- Add half a chopped onion, 1 tablespoon grated ginger, 1 teaspoon pepper and fry for 2-3 minutes.
- Add half of the frozen vegetable mixture and fry for another 5 minutes, stirring constantly.
- Add half of the cooled rice and gently stir (or toss) for another 5 minutes until the rice is heated through.
- Drizzle in 1/2 tablespoon of dark soy sauce and mix gently, adding salt or more soy sauce and pepper if needed.
- Rinse the wok and repeat the process with the other half of the ingredients. Source: Olive Magazine
