- 2 Onions
- 20 cl Vin blanc sec
- 650 ml Water
- 50g grated Parmesan
- 20 cl Liquid fresh cream
- 1 tablespoon olive oil

- Peel the onions and slice them thinly so they soften during cooking and are evenly distributed throughout the risotto. Clean the button mushrooms with a clean cloth or slightly damp paper towel, then slice them. Next, measure the Arborio rice, dry white wine, water, heavy cream, and grated Parmesan cheese so you have all the ingredients ready before starting to cook in the Cookeo.
- Pour the olive oil into the Cookeo pot, then add the chopped onions and Arborio rice. Select the browning function and sauté everything for about 3 minutes, stirring regularly with a wooden spatula. The rice grains should become slightly translucent, without browning. This step develops the flavors of the dish and creates the creamy texture typical of risotto.
- Add the dry white wine to the pot, directly onto the rice and the already sautéed onions. Continue cooking on the browning setting for about 2 minutes, stirring occasionally to coat the rice well and allow the alcohol to evaporate. The wine adds a fragrant note and a touch of acidity that balances the richness of the mushroom risotto.
- Add the sliced button mushrooms, then pour the water into the pot. Season with salt and pepper to taste, then stir one last time to evenly distribute the ingredients. Close the Cookeo and start pressure cooking for 15 minutes. This method produces a rich and creamy risotto without the need to stand by the pot or stir constantly.
- At the end of cooking, carefully open the Cookeo and immediately add the heavy cream and grated Parmesan cheese. Mix thoroughly to combine and melt the cheese in the residual heat of the risotto. This will give you a smooth, creamy, and delicious texture. Taste, adjust the seasoning if necessary, and serve immediately while the risotto is still piping hot.
