Rigatoni with saffron

Procedure

Brown the guanciale in a hot pan.

STEP 2

Add a little powdered saffron and blend with a little dry white wine.

STEP 3

Once the wine has evaporated, add the cherry tomatoes.

STEP 4

Cook for 5/6 minutes with the lid on.

The chef recommends:

Add a little saffron powder to the pot with the water.

I'm Giovanni D'Amato, an emerging Italian chef. It's been four years since I discovered this passion, which later turned into a career. I first entered the kitchen almost for fun, and I was fascinated by a world I hadn't seen before, so I decided to study to become a chef. I define my style as classic/contemporary, or rather, I respect tradition but with an eye for innovation.
