Russian cake from the Ascaso pastry shop

If you've been following me for a while, you'll surely remember that I'm a huge fan of Ascaso pastry shop. Their nougat is one of my favorites at Christmas, their Panettone is wonderful, and their Russian Cake is one of the finest pastries I've ever tasted, and that's what I'm going to talk about today.

I already told you their story in this post. Today I want to remind you that they're celebrating their 130th anniversary, and to mark the occasion, they've updated the packaging of their flagship product, the Russian cake. In this strange and difficult year, I find these kinds of initiatives wonderful.

The Russian Cake is the most popular item at this renowned pastry shop in Huesca. It's made with hazelnuts, almonds, egg whites, praline mousse, and a secret ingredient that makes it truly unique. Its texture, which I can't quite describe as spongy, creamy, or both, is absolutely delicious.

Since its creation in 1974 —Sura Ascaso tells me over the phone—, we have marketed it with the same packaging and this year seemed special enough to take this step.

The new box design features its familiar vibrant blue and fuchsia colors and its signature circles with gold accents. But undoubtedly, the most noteworthy aspect is our commitment to environmental sustainability, achieved by reducing plastic by 93.5% compared to the previous packaging and using certified plant-based inks.

Its unique characteristics allow it to keep well over time, even without preservatives, making it ideal for long journeys, which is also part of its success. It should be stored in a standard refrigerator and is best served at room temperature (between 15°C and 22°C), although it can tolerate a wider temperature range depending on personal preference. Stored between 0°C and 8°C, it has a shelf life of two months. It is flour-free, making it suitable for people with celiac disease.
