Cocoa Brownies: Step-by-Step Recipe (VIDEO)

- 300 grams of butter at room temperature
- 480 grams of brown sugar
- 140 grams of cocoa
- 2 teaspoons of vanilla
- 4 eggs at room temperature
- 140 grams of all-purpose flour
- 60 grams of chopped pecans
- 60 grams of chopped walnuts

- In a bowl, combine the butter, brown sugar, cocoa powder, and vanilla. Place over a pot of simmering water (double boiler) and stir only until the butter is melted (not the sugar). This takes 4 to 5 minutes.
- Transfer the mixture to the mixing bowl and begin beating, adding the eggs one at a time. Beat for 2 minutes, until the mixture is smooth.
- Reduce the mixer speed and beat while adding the flour. Once incorporated, beat for 3 minutes at normal speed, stopping to scrape down the sides of the bowl with a spatula.
- Remove the bowl from the mixer, add the chopped pecans and walnuts with folding motions, using the spatula.
- Grease the silicone Press mold with a little butter and pour in all the brownie mixture.
- Bake at 160°C for 25 minutes. Add a final 5 minutes at 180°C. Remove from the oven when a toothpick inserted into the center comes out with only a little bit of batter.
- Let cool completely, unmold and cut into squares.
- Serve sprinkled with powdered sugar.
