To prepare this dish, it is essential to use fresh, high-quality seafood. This will ensure optimal flavor and that the seafood is cooked to perfection. INSTRUCTIONS

  • Season the prawns with salt, pepper, and lemon juice. Set aside in the refrigerator.
  • Heat oil in a pot and prepare a dressing with the onion, garlic, yellow chili pepper, panca chili pepper, salt, pepper, cumin, oregano and the rocoto pepper slices.
  • When the dressing is ready, add the white wine and let the alcohol evaporate.
  • Then, add the broth and let it reduce for a few minutes.
  • Remove the rocoto pepper slices, add all the seafood and cook for a maximum of 3 minutes.
  • Adjust the salt and add the cream, chopped cilantro, and grated Parmesan cheese. Serve with white rice.
