Syrup:

  • Put all the ingredients in a pot.
  • Mix and leave to heat without stirring. Remove as soon as it starts to boil.
  • Remove and let cool.

Fondant:

  • Cook all the ingredients together until they reach 117°C.
  • If you don't have a thermometer, you can check if it has reached the right consistency using a simple method: dip your fingers in ice water, take a small amount of the mixture, and dip it into the ice water. If you can form a ball with the fondant, then it's ready.
  • Remove and let cool in the mixer using a paddle until it crystallizes and cools.
  • Add syrup little by little, if necessary.

Homemade treat:

  • Cook both milks together.
  • Stir until it reaches a firm consistency (like a thick custard)
  • Let cool covered with cling film, pressing it directly onto the surface.

Armed:

  • Toast the pecans and let them cool.
  • Take one half of a pecan, place dulce de leche on it, and cover with another half of a pecan.
  • Let it cool in the refrigerator for about 10 minutes.
  • Next, dip each stuffed pecan into the fondant at 30°C. Remove and trim off any excess. If the fondant is too thick, loosen it with a little hot syrup.
  • Let cool and dry for at least 1 hour and wrap.
