Harira: Moroccan Chickpea & Tomato Soup

Harira is a traditional Moroccan soup that is enjoyed all year round and it’s especially popular to break the fast during the sacred month of Ramadan.

Ingredients · Servings 6
  • 2-3 tbsp olive oil
  • 1 medium yellow onion
  • 2 cloves of garlic
  • 1 tbsp harissa (oriental spice mix)
  • ⅓ tsp cinnamon
  • 2 cm 3/4" grated ginger root
  • 400 g diced tomatoes (fresh or canned)
  • 400 g can chickpeas
  • 1 liter clear vegetable stock
  • fresh parsley or cilantro leaves
  • lemon zest
Method · 30 min
  1. Heat the oil in a pan, then add the onion and garlic and sauté for 2-3 minutes over medium heat.
  2. Add the harissa, ginger, and cinnamon, and leave on the heat for a minute, then add the diced tomato.
  3. Bring to a boil, then add the chickpeas and vegetable stock.
  4. Let the soup simmer for 15 minutes.
  5. Season to taste with salt and sprinkle with fresh parsley/cilantro leaves and lemon zest.

Harira is a delicious vegan soup, which takes only 30 minutes to prepare and, in addition to being a tasty and nutritious dish, it provides an exceptional culinary journey to the exotic Morocco.
