Pasta with hot-smoked salmon and courgette

Pasta with hot-smoked salmon – In the mood for a quick pasta that's just a little bit different? This pasta with hot-smoked salmon and courgette is creamy, fresh, and on the table in no time. Perfect for a weeknight.

Ingredients · Servings 2
  • 200 gr pasta
  • 1 courgette
  • 150 gr warmgerookte zalm
  • 2 tenen knoflook
  • 150 ml kookroom
  • 1 tl Italiaanse kruiden (gedroogd)
  • rasp van een halve citroen
  • handje geraspte Parmezaanse kaas
  • snufje peper en zout
Method · 25 min
  1. Kook de pasta volgens de instructies op de verpakking.
  2. Snijd de courgette in halve plakjes en hak de knoflook fijn. Trek de warmgerookte zalm in grove stukjes.
  3. Giet een scheutje olie in een pan en bak de courgette een paar minuten tot deze iets zachter wordt. Voeg de knoflook en Italiaanse kruiden toe en bak kort mee.
  4. Schenk de kookroom erbij en laat de saus een paar minuten zachtjes pruttelen. Breng op smaak met een snufje peper en zout en eventueel wat citroenrasp.
  5. Meng de gekookte pasta door de saus en schep de stukjes warmgerookte zalm er voorzichtig doorheen.
  6. Serveer de pasta met geraspte Parmezaanse kaas.
  7. Tip: het is ook lekker om de Parmezaanse kaas toe te voegen in de pan en door de pasta te mengen.

Pasta with hot-smoked salmon and courgette

  • 200g pasta
  • 1 courgette
  • 150 g hot-smoked salmon
  • 2 cloves of garlic
  • 150 ml cooking cream
  • 1 tsp dried Italian herbs
  • zest of half a lemon
  • handful of grated Parmesan cheese
  • pinch of salt and pepper

Preparation method:

  • Cook the pasta according to the instructions on the packaging.
  • Cut the courgette into half slices and finely chop the garlic. Tear the hot-smoked salmon into coarse pieces.
  • Pour a splash of oil into a pan and fry the courgette for a few minutes until it softens slightly. Add the garlic and Italian herbs and fry briefly.
  • Pour in the cooking cream and let the sauce simmer gently for a few minutes. Season to taste with a pinch of salt and pepper and, optionally, some lemon zest.
  • Mix the cooked pasta into the sauce and gently stir in the pieces of hot-smoked salmon.
  • Serve the pasta with grated Parmesan cheese.
  • Tip: it is also delicious to add the Parmesan cheese to the pan and mix it through the pasta.
