Tomato, broccoli and mushroom risotto

- Riz Carnaroli 320 g
- Pulpe de tomate 800 g
- Bouillon de légumes 700 g
- Huile d'olive extra vierge à volonté

- Brocoli (fleurettes) 100 g

- Pour pre9parer le risotto e0 la tomate avec brocolis et champignons, commencez par les bouquets de brocolis. S'ils sont trop gros, coupez-les en deux et e9liminez les parties les plus dures 1 . Plongez les bouquets dans de l'eau bouillante sale9e 2 et faites-les cuire jusqu'e0 ce qu'ils soient cuits mais encore fermes 3 .
- Égouttez-les et transférez-les immédiatement dans un saladier d'eau glace9e 4 , afin d'arrêter la cuisson et de pre9server leur couleur. Une fois refroidis, égouttez-les soigneusement et assaisonnez-les d'un filet d'huile 5 . Ajustez si besoin le sel, mélangez 6 et re9servez.
- Dans une petite casserole, versez l'huile d'olive extra vierge 7 et ajoutez l'ail et les tiges de basilic 8 . Laissez parfumer doucement e0 feu doux jusqu'e0 ce que l'ail soit le9ge8rement dore9, en veillant e0 ne pas le brfbler. Ajoutez la pulpe fine de tomate 9 .
- Salez 10 et laissez cuire e0 feu doux pendant 30 minutes. c0 mi-cuisson de la sauce, vous pouvez re9chauffer le bouillon de le9gumes et commencer la cuisson du risotto. Versez le riz Carnaroli dans une casserolle 11 et faites-le nacrer e0 sec avec une pince9e de sel 12 .
- Me9langez pendant la torre9faction et, quand le riz de9gagera son parfum caracte9ristique et deviendra brillant, commencez e0 ajouter le bouillon de le9gumes chaud 13 . Poursuivez la cuisson en ajoutant du bouillon au besoin et en remuant ; vous devrez continuer ainsi jusqu'e0 amener le riz e0 environ les trois quarts de sa cuisson 14 . Lorsque la sauce tomate sera preate, retirez l'ail et les tiges de basilic 15 .
- Inte9grez ensuite la sauce au riz presque cuit 16 et me9langez bien. Continuez la cuisson du risotto jusqu'e0 ce qu'il soit entie8rement cuit, en le maintenant cre9meux et en ajoutant du bouillon seulement si ne9cessaire. c9teignez le feu et ajoutez le beurre froid en de9s 17 et le Parmesan 18 .
- Mantequez en me9langeant soigneusement 19 jusqu'e0 obtenir un risotto cre9meux et bien lie9 20 . Laissez-le reposer 1 minute avant de le servir. Re9partissez ensuite le risotto dans les assiettes 21 .
- Comple9tez avec les champignons chiodini sous huile bien e9goutte9s 22 et les bouquets de brocoli assaisonne9s 23 . Servez imme9diatement votre risotto e0 la tomate, brocolis et champignons 24 .

Preparation
To prepare the tomato risotto with broccoli and mushrooms, start with the broccoli florets. If they are too large, cut them in half and remove the toughest parts. 1. Plunge the florets into boiling salted water 2 and cook them until they are cooked but still firm. 3.
Drain them and immediately transfer them to a bowl of ice water to stop the cooking process and preserve their color. Once cooled, drain them thoroughly and season with a drizzle of oil. Adjust the salt if necessary, mix, and set aside.
In a small saucepan, pour the extra virgin olive oil and add the garlic and basil stems. Gently infuse the oil over low heat until the garlic is lightly browned, being careful not to burn it. Add the finely chopped tomato pulp.
Add salt and cook over low heat for 30 minutes. Halfway through cooking the sauce, you can reheat the vegetable stock and start cooking the risotto. Pour the Carnaroli rice into a saucepan and toast it briefly with a pinch of salt.
Mix during roasting and, when the rice gives off its characteristic aroma and becomes shiny, start adding the hot vegetable stock 13. Continue cooking, adding stock as needed and stirring; you will need to continue in this way until the rice is about three-quarters cooked 14. When the tomato sauce is ready, remove the garlic and basil stems 15.
Next, stir the sauce into the almost cooked rice (16) and mix well. Continue cooking the risotto until it is fully cooked, keeping it creamy and adding stock only if necessary. Turn off the heat and stir in the cold butter (17) and the Parmesan cheese (18).
Mantequez, mixing thoroughly 19 until you obtain a creamy and well-bound risotto 20. Let it rest for 1 minute before serving. Then divide the risotto among the plates 21.
Complete with the well-drained chiodini mushrooms in oil 22 and the seasoned broccoli florets 23. Serve your tomato, broccoli and mushroom risotto immediately 24.
