A fabulous combination for cold evenings: You have to try this quick plum recipe

Autumn is here and with it the long-awaited plum season.

Autumn is here and with it the long-awaited plum season. Although most people know them primarily in the sweet version, in the form of various cakes, dumplings, jams or other desserts, in the kitchen you can do a little more magic with this fruit. First, they are made into plum brandy, but secondly, you can also prepare them in a salty way. If you combine them with bacon and strong cheese, for example, you will have a great treat for cold autumn evenings. The great advantage of this recipe is that it is extremely simple and quick to prepare. So how to make it?

Baked plums with bacon and cheese

First, it is important to know how to choose plums for the recipe. Firm, ripe plums are ideal, with a strong flavor but not too soft. If you use plums that are too soft, they could fall apart during handling and it would be harder to put cheese in them. The plum should therefore be firm so that it still holds together. As for the cheese, you have several options. Gorgonzola is ideal, but you can use any blue cheese, or goat cheese if you want a softer flavor.

Ingredients (for 4 servings): 8 large fresh plums 100 g gorgonzola or other blue cheese 8 slices of English bacon 1 tablespoon olive oil 1 tablespoon balsamic cream 1 teaspoon fresh thyme leaves A pinch of freshly ground black pepper 8 toothpicks.

Procedure:

First, preheat the oven to 190 degrees Celsius. Take a baking sheet or baking dish and line it with baking paper. Then take the plums, wash them thoroughly under running water and dry them thoroughly. Then cut the prunes lengthwise, remove the pits and slightly widen the opening. Take the gorgonzola, or another cheese of your choice, and cut them into 8 approximately equal pieces, each weighing about 10 to 15 grams. Place these pieces of cheese in the plum where the pit used to be. Press down lightly so that the cheese stays inside.

Then wrap each filled plum with a slice of bacon and secure the ends of the bacon with a toothpick so that the bacon does not unroll during baking and keeps its shape. Then place the plums on a baking sheet, leaving at least a small gap between them. Brush with a little olive oil and bake for about 15 to 20 minutes. The bacon should be nicely browned and crispy on the surface. After about 10 minutes, check the plums and carefully turn them over if the bacon is browning unevenly. After removing from the oven, let the plums rest for about 5 minutes, and finally season with balsamic cream and thyme. Enjoy!
