Easy Vanilla Milk Cake Recipe

If there’s a dessert that I’m absolutely obsessed with, it’s got to be milk cakes.

Ingredients · Servings 9
  • 5 Eggs (yolks & whites separated)
  • 450 g Sugar (split into 250g + 200g)
  • 1 tsp Vanilla Extract
  • 180 g Plain Flour / All-purpose Flour
  • 1½ tsp Baking Powder
  • ½ tsp Salt
  • ½ cup Whole Milk
  • 57 g Butter (melted)
  • 300 ml Evaporated Milk
  • 397 g Condensed Milk (one tin)
  • 250 ml Whole Milk
  • 284 ml Double Cream
  • 50 g Sugar
  • Sprinkles (optional) (for decoration)
Method · 50 min
  1. Preheat oven to 180°C / 350°F.
  2. Whisk the yolks with 250g sugar until light & fluffy. Mix in vanilla extract.
  3. Sieve flour, baking powder, and salt into the mixture. Mix to combine.
  4. Stir in milk and melted butter.
  5. In a separate mixing bowl, whisk egg whites till starting to stiffen.
  6. Add the remaining 200g sugar and continue to whisk until firm & glossy.
  7. Fold in a third of the whipped egg whites into the yolk mixture to loosen up the batter. Then fold in the second third and, as it starts to combine, fold in the remaining third till everything is just combined.
  8. Transfer the batter into a 8x8 baking tin and bake in the oven for 40-50 minutes till golden on top. Set aside to allow to cool down.
  9. In a large jug, mix together evaporated milk, condensed milk, and whole milk.
  10. After the cake has cooled down, use a fork / skewer / toothpick to prick holes all over.
  11. Pour half the milk all over the cake and reserve the remaining half for serving later.
  12. Chill in the fridge for a few hours or overnight.
  13. Whisk together Double Cream and Sugar until stiff peaks form.
  14. Spread the whipped cream over the chilled cake. Top with sprinkles if you like and serve with the remaining sweet milk!

Also known as tres leches cake, milk cake is wonderfully rich and milky without needing to feel heavy. The secret to this recipe is separating the eggs and whipping the egg whites before gently folding them into the batter. This creates an extra-fluffy sponge that can absorb all that delicious three-milk mixture without becoming overly dense or soggy.

What is Milk Cake

This vanilla milk cake is a tres leches-style cake, made from a light vanilla sponge soaked in a mixture of three different milks. “Tres leches” translates to “three milks”, referring to the milk mixture poured over the baked sponge. For this recipe, I use evaporated milk, sweetened condensed milk and whole milk. The sponge absorbs the mixture as it chills, giving every bite a wonderfully moist and creamy texture.

Different versions of milk-soaked cake can be found around the world. Tres leches is particularly associated with Latin American cuisine, while a similar dessert known as trileçe is popular in Turkey and the Balkans and is often finished with a caramel topping. My version keeps things simple with a vanilla sponge and lightly sweetened whipped cream, making it a lovely base for different toppings and decorations.

This easy milk cake recipe has become one of my favourite make-ahead desserts for guests and special occasions. It’s always a showstopper, and everyone loves it. Since the cake needs time to chill and absorb the milk, you can easily prepare it the day before and simply add the whipped cream topping when you’re ready to serve. It’s perfectly light and fluffy, and its rich vanilla flavour is a classic flavour that’s hard to resist. Whipping the egg whites separately incorporates plenty of air into the sponge, giving it a wonderfully soft texture. The airy sponge is able to soak up the sweet milk mixture while still retaining its structure. This vanilla milk cake frequently appears when we host family gatherings, and during Ramadan and Eid.

Ingredients You Need for the Vanilla Sponge

  • Vanilla Extract – gives the sponge its classic vanilla flavour. Use a good-quality vanilla extract rather than vanilla essence if possible.
  • Salt

Ingredients for the Milk Mixture and Topping

  • Evaporated Milk – use unsweetened evaporated milk. It contributes to that silky creaminess without thickening.
  • Condensed Milk – provides the majority of the sweetness and rich dairy flavour.
  • Whole Milk – thins the mixture so it can soak evenly through the sponge.
  • Double Cream (i.e. heavy-whipping cream), Sugar – for the whipped cream topping. Icing sugar preferred, but regular white granulated sugar still works.

Recipe Tips & Notes

  • You are going to need a 20cm / 8-inch square cake pan for this recipe.
  • Whipping the whites separately is the key to creating the light sponge needed to absorb the milk.
  • When incorporating whipped egg whites into the cake batter, do it in batches – ideally about a third each time – to help lighten the batter and allow the whipped egg whites to combine with the mixture quicker.
  • It is very important that you fold, not stir, the whipped egg whites into the cake batter. Stirring will cause the batter to overmix, releasing all the air that you have incorporated earlier through whipping the egg whites. Overmixing during this stage will cause the cake the deflate.
  • After poking holes & pouring milk over the cake, allow it to chill in the fridge for at least a few hours or even overnight. This “resting period” allows the cake to fully soak up and absorb the delicious milk mixture, offering not just a milky flavour but also a beautiful moist crumb.

How to Store Milk Cake

Store your milk cake in an airtight container (or wrap tightly with plastic wrap) and keep it chilled in the refridgerator up to 3-5 days. Never leave a soaked milk cake at room temperature for more than 2 hours due to the high milk and cream content.
