Fish enjoys extraordinary popularity! You might think… wild, free, and endless, eco-friendly and excellent for your health… fish is good for everyone. Yes, but here's the thing… it's not true! Fish is very expensive, and intensive fishing means it's no longer an unlimited resource!

From a health perspective, we know that fish only brings good things, however we often forget to mention that fish fix in their flesh heavy metals, hydrocarbons, plastics and other poisons dumped into the seas by ships, the sewers of our cities, our pharmaceutical, nuclear, chemical, industrial factories of all kinds... But between two evils choose the lesser.

Fish remains a magical ingredient to work with if you know how to choose it based on its freshness. If, however, you insist on cooking and eating it, try to keep it pink at the bone; this requires a skill that can be acquired with a little practice.

Quick to prepare, fish doesn't require elaborate or convoluted cooking methods; no need for complicated alchemy to achieve culinary ecstasy. Requiring little energy, fish doesn't need prolonged, intensive, or aggressive cooking.

Treat yourself to some fresh oysters or fish soup.
