What is spherification and why is it easier than it seems?

The word "spherification" sounds complicated, but it covers a simple reaction. The liquid turns into elastic balls that pop beautifully on the tongue. Step-by-step instructions

  • Mix the alginate with the liquid. Use a blender and mix thoroughly. Let the mixture sit for 10 minutes to release any air bubbles. This is important, otherwise the balls will be uneven.
  • Prepare a molding "bath." In a separate container, dissolve calcium chloride in water. This will be our working solution.
  • Carefully drip the liquid base into the calcium solution. A thin gel layer will form over your eyes, trapping the flavor inside. You can use a regular syringe without a needle or a teaspoon.
  • After a minute, remove the balls with a slotted spoon and rinse them thoroughly in clean water. Otherwise, the caviar will taste bitterly salty.

The main life hack: don't overcook the balls in the calcium. Otherwise, the shell will become hard, like plastic. Just one minute is enough, and the texture will be tender.
