  1. Limpia las sardinas retirando las vísceras y enjuágalas rápidamente con agua fría. Sécalas muy bien con papel de cocina.
  2. Machaca o pica finamente el ajo y mézclalo con el aceite de oliva, el perejil y unas gotas de limón. Reserva esta mezcla para el final.
  3. Sala ligeramente las sardinas por ambos lados. No es necesario marinarlas durante mucho tiempo, ya que el pescado debe conservar su sabor natural.
  4. Ensarta las sardinas en las brochetas por la zona cercana a la cabeza, atravesándolas de forma que queden firmes y alineadas.
  5. Prepara una parrilla con brasas bien calientes. Las brasas deben estar incandescentes, pero sin llamas fuertes que quemen el pescado.
  6. Coloca los espetos sobre la parrilla, dejando cierta distancia entre las sardinas para que el calor circule correctamente.
