The Spanish omelet is the dish that stirs the most passion in Spain, and Dani García has just reignited the debate.

It's no secret that the chef belongs to the onion-free club, the faction that defends the tortilla without onions. And he's not alone: ​​Dabiz Muñoz also maintains that onions add unnecessary sweetness. However, Dani García takes it a step further with a trick that has half of Spain talking.

During his appearance on El Hormiguero, the Marbella chef didn't mince words: "It's an absurd controversy." For him, an authentic and traditional potato omelet recipe boils down to the essentials. "Really, to make a good potato omelet there are four ingredients: salt, olive oil, potatoes, and eggs, period," he commented. And he added, emphatically: "Anything beyond that is adulterating it."

The result, she says, is a much tastier and juicier tortilla. "After making the tortilla dough itself, which also has its own little trick, we add an olive oil mayonnaise," she explains in the book. This gives her "a freshness and a pure, unique olive oil flavor." Our colleague tried it on video, and the result, she assures us, is amazing.

Why mayonnaise doesn't 'adulterate' your omelet

Here's the trick. If only salt, olive oil, potato, and egg are allowed, why add mayonnaise? The key is that this dressing doesn't introduce anything external: it emulsifies oil, egg, and salt—the same ingredients the chef already champions. There's no onion, no peppers, no chorizo. Just a creamier texture and a more intense olive oil flavor.

The Andalusian chef asserts that when you eat his tortilla, you notice a purity and a unique flavor of potato, egg, and olive oil in the aftertaste that you simply can't achieve with a tortilla made with onions. His conclusion leaves no room for doubt: 'This is what a tortilla should be.'

The idea isn't new, but it is provocative. In a country where the potato omelet is practically a religion, any variation raises eyebrows. Dani García doesn't want onions, he wants nothing more than the basics, and he adds mayonnaise without considering it a betrayal. On the contrary, he defends it as part of the recipe.

The eternal debate about onions in tortillas is more alive than ever.

The battle between onion lovers and onion-free lovers is practically a national sport, and every new opinion from a celebrity chef reignites the flames. Onions divide Spain as much as the consistency of the food or the thickness of the potatoes. Dani García unabashedly sides with the purists: just four ingredients and, if anything, mayonnaise.

The book "Cook at Home Like Dani" is published amidst a wave of signature home-cooked recipes, and the chef takes the opportunity to champion the Mediterranean pantry. Olive oil mayonnaise becomes his signature, a way of saying that you can innovate without betraying the essence. And he's not the only one: in Betanzos, for example, the famous local tortilla officially forbids onions, according to the same source. Tradition is very much his own.

The next time you make a Spanish omelet at home, try whisking a tablespoon of olive oil mayonnaise into the eggs and fried potatoes. According to Dani García himself, the result is juicier and has a captivating olive oil finish. Just don't expect everyone to agree.
