- The step-by-step process
- In a large bowl, combine the flour, salt, and instant yeast (if using). Gradually add the warm water and oil, kneading with your hands until the dough is smooth and elastic. Knead the dough for about 10 minutes, until it's elastic and no longer sticks to your hands. Cover the bowl with a cloth and let it rest for 30 minutes.
- After this time, I divide the dough into 4 pieces and roll each piece out with a rolling pin until it's about 1 cm thick. I heat a nonstick pan over medium heat and cook each bread disc for 3-4 minutes per side, until golden brown and puffed up. Alternatively, I can bake it in the oven at 200°C (400°F) for 15-20 minutes. The unleavened bread is ready to be enjoyed hot or warm. It will keep for a couple of days, wrapped in a cloth.
The result is a fragrant bread, with a golden crust and a soft interior, ideal for accompanying cured meats, cheeses, vegetables or for being stuffed like a sandwich.
