Plum dumplings: Potato dough encases juicy plums, with a sweet surprise
Our recipe of the day from September 18th is plum dumplings – ripe plums wrapped in soft potato dough with sugar cubes, cooked in water and rolled in golden brown buttered breadcrumbs.
The potato dough begins with floury potatoes, which are boiled, drained, and pressed through a potato ricer while still hot. Butter, egg yolks, flour, salt, and vanilla sugar are added – the dough needs to cool for about 15 minutes before it's easy to work with. Shaping it too soon risks a sticky dough that won't hold the plum.
A sugar cube is placed inside each pitted plum. It melts during cooking, giving the inside a sweet, slightly caramelized flavor – a delightful surprise in the center. The dough is formed into balls, flattened, and each plum is tightly wrapped. The dumplings are then simmered in boiling water for about ten minutes, until they rise to the surface. Breadcrumbs are toasted in a pan with butter and sugar until golden brown, the cooked dumplings are rolled in the toasted breadcrumbs, and then dusted with powdered sugar.
