Country bread from the cast iron pot.
Ingredients · Servings 20 Scheiben
- ¼ Würfel frische Hefe (ca. 10 g)
- 1 TL Zucker
- 800 g Weizenmehl (Type 550)
- 1 EL Salz
- 200 ml zimmerwarmes Schwarzbier (alternativ: alkoholfreies dunkles Bier)
- Außerdem: Mehl zum Bestäuben
Method · 15 h 20 min
- Die Hefe zerbröckeln und mit dem Zucker in 350 ml lauwarmem Wasser auflösen. Mit dem Mehl verrühren, Salz und Bier zufügen, unterrühren und den (klebrigen!) Teig abgedeckt 14-16 Std. bei Zimmertemperatur gehen lassen.
- Den Backofen auf 220°C vorheizen. Dabei einen gusseisernen Topf (Ø 26 cm, mit Deckel) ca. 30 Min. mit im Backofen erhitzen. Den weichen Teig auf ein sehr gut bemehltes Geschirrtuch geben, die Seiten mehrfach zur Mitte hin falten und (ohne Geschirrtuch) mit der gefalteten Seite nach unten in den sehr heißen (!) Topf legen.
- Zugedeckt im Ofen ca. 30 Min. anbacken. Den Deckel abnehmen und das Brot in weiteren 35-40 Min. fertig backen. Auf einem Kuchengitter auskühlen lassen, in Scheiben schneiden und servieren.
Country bread from the cast iron pot
The secret of the cast iron pot lies in the perfect ripening climate: the closed lid retains moisture during the initial baking phase – just like in a professional bakery oven. The result is phenomenal crust formation and an even, airy crumb.
- ¼ cube of fresh yeast (approx. 10 g)
- 1 tsp sugar
- 800 g wheat flour (type 550)
- 1 tbsp salt
- 200 ml room-temperature dark beer (alternatively: non-alcoholic dark beer)
- Also needed: flour for dusting.
- Crumble the yeast and dissolve it with the sugar in 350 ml lukewarm water. Mix with the flour, add the salt and beer, stir in, and let the (sticky!) dough rise, covered, for 14-16 hours at room temperature.
- Preheat the oven to 220°C. Heat a cast-iron pot (26 cm diameter, with a lid) in the oven for about 30 minutes. Place the soft dough onto a very well-floured tea towel, fold the sides several times towards the center, and (without the tea towel) place it, folded side down, into the very hot (!) pot.
- Cover and bake in the oven for about 30 minutes. Remove the lid and bake for another 35-40 minutes until done. Let cool on a wire rack, slice, and serve.
It goes well as a side dish with stews, as well as with a sweet spread or a spicy spread, e.g. with radishes and cress.
